Chocolate protein truffles

Rich in soluble fibre, protein, vitamin E and omega 3. These snack balls provide the perfect balance of healthy fats, protein and carbohydrates - a firm favourite with adults and children!

This is one of our most loved recipes. It has been a favourite with our clients for years, and everyone is always surprised by the ingredient list!

My chef made these for me and I didn't believe her when she told me that they had chickpeas in - I love them even more now! –R.M.

These moist, rich, chocolate-coconut truffles were created as a healthy snack for our families . The plan was to make something that was suitable as a pre-workout snack, as well as something we could feed our toddlers. Fast forward years later and they are now feature regularly on our client's meal plans.


The Perfect Ball of Energy


Yields 40 balls

Serving suggestion: 3 balls (30g)


Ingredients

  • 250g / 1 can of drained and washed chickpeas

  • 6 Medjool dates, stones removed

  • 40g desiccated coconut

  • 25g ground almonds

  • 20g cacao (plus extra to roll the balls in)

  • 4 tbsp flaxseed oil (linseed oil)


Directions

  1. Place all ingredients into a food processor and blend until a smooth paste forms.

  2. Prepare a bowl with a little cacao powder in the bottom (to roll the balls in).

  3. Take 1 rounded teaspoon of mixture and roll it between your hands into a ball shape.

  4. Roll the ball in cacao powder (or desiccated coconut,/ground almonds - you decide) and place in an airtight container.

  5. Repeat step 4 until all of the mixture is used up. The recipe should yield 40 balls.

  6. The container of finished balls can be kept in the fridge for 2 weeks. They can also be frozen!
