These pancakes are our go-to energy breakfast before a tennis tournament. Nerves are usually high pre-match, so this can affect appetite. We have found that these pancakes never fail to hit the spot - for both fuel and enjoyment!
Rise and shine, it's pancake time!!
This recipe, as with all pancakes batters, is best if made the night before you cook it.
Eat Well Pancakes
Makes 6-8 pancakes
Ingredients
90g / 3 heaped tbsp white flour
60g / 2 heaped tbsp whole wheat flour
3 eggs
350ml high protein milk
1 tsp baking powder
2 tbsp sugar
20ml / 2 tbsp cold pressed linseed oil
Coconut / olive oil for cooking
Directions
Place all ingredients (except coconut oil) into a high power belnder and mix until a smooth batter forms.
Store in a covered jug overnight, in the fridge.
When you are ready to cook the pancakes, place a small frying pan on a low/medium heat (when using coconut/linseed oil it shouldn't get too hot).
Place enough batter into the pan to make a 20cm pancake. Cook gently for 3 minutes, then flip over when it is cooked on one side.
Serve immediately with fresh fruit.
