Eat Well Pancakes

Updated: Jun 10, 2023

These pancakes are our go-to energy breakfast before a tennis tournament. Nerves are usually high pre-match, so this can affect appetite. We have found that these pancakes never fail to hit the spot - for both fuel and enjoyment!

Rise and shine, it's pancake time!!

This recipe, as with all pancakes batters, is best if made the night before you cook it.

Eat Well Pancakes

Makes 6-8 pancakes

Ingredients

  • 90g / 3 heaped tbsp white flour

  • 60g / 2 heaped tbsp whole wheat flour

  • 3 eggs

  • 350ml high protein milk

  • 1 tsp baking powder

  • 2 tbsp sugar

  • 20ml / 2 tbsp cold pressed linseed oil

  • Coconut / olive oil for cooking

Directions

  1. Place all ingredients (except coconut oil) into a high power belnder and mix until a smooth batter forms.

  2. Store in a covered jug overnight, in the fridge.

  3. When you are ready to cook the pancakes, place a small frying pan on a low/medium heat (when using coconut/linseed oil it shouldn't get too hot).

  4. Place enough batter into the pan to make a 20cm pancake. Cook gently for 3 minutes, then flip over when it is cooked on one side.

  5. Serve immediately with fresh fruit.
