Spiced banana and apple slice

This lightly spiced and perfectly moist slice is ideal for a snack (for adults and children!)

This is pretty much an “all-in” mix, so it is very fast to throw together.



Ingredients

  1. 100g mixed, dried berries/sultanas

  2. 80ml melted coconut oil

  3. 2 eggs, beaten

  4. 1 tsp vanilla extract

  5. 1 tbsp runny honey (use maple syrup if it is for babies under 12 months)

  6. 2 bananas, mashed

  7. 1 small apple, chopped (90g)

  8. 140g ground almonds/hazelnuts

  9. 10g coconut flour

  10. 1 tsp cinnamon

  11. 2 tsp baking powder

  12. Flaked almonds to decorate


Method

  1. Preheat the oven to 160 C.

  2. Line a brownie tin (17 x 26cm) with grease proof paper.

  3. Soak the dried fruit in the coconut oil for an hour if you can, but this isn’t essential.

  4. Add all remaining wet ingredients to the berries/oil & mix well.

  5. Now, in a separate bowl, combine all remaining dry ingredients and mix well.

  6. Add the wet mix to the dry and stir until completely combined.

  7. Pour the mix into the brownie tin, evenly spread it out & then sprinkle the top with flaked almonds.

  8. Bake for 40-45 mins, or until golden.

  9. When cooked. Turn it out onto a cooling rack to cool before cutting into slices.
